Summer came to its necessary end, and with it, so did the camping trips with crackling logs and beach bonfires. While it may be too cold for many of us to sleep outside anytime soon, that doesn’t mean we have to give up one of the best traditions of the great outdoors: s’mores.
They’re crunchy, they’re gooey, and they’re a heck of a lot of fun to make. But nothing hits that melty-meets-crispy balance quite like a campfire. What to do when you’re inside? Unfortunately, a microwave won’t cut it. While it may melt the chocolate, it’ll make the marshmallows too puffy, and the graham crackers will emerge woefully softer than before. (If you’re desperate, try heating the chocolate on its own and then spreading it on room-temp grahams.)
For delicious indoor kitchen s’mores, your best bet is the oven. The broiler offers a dry, high heat that will give mouth-watering results. Pro tip: since the marshmallows won’t be as squishy as ones toasted over a campfire, cut them in half. That’ll expose the softer interior and make it easier to bite into the sandwich without breaking the cracker. Once they’re in the oven, they’ll be ready in under ten minutes, so check frequently until they look juuust right.
No marshmallows? Try slicing bananas, which will get a caramelized effect in the oven, for a sweet substitution.
Recipe: Perfectly Melty Indoor S’mores (serves 4)
4 graham cracker sheets
4 marshmallows, or 1 banana
Set the oven to broil. Break each graham cracker sheet in half and lay out evenly on a baking sheet. Place one square of chocolate onto four cracker halves. Put one marshmallow or several banana slices onto the four remaining cracker halves. Slide the baking sheet into the oven, checking every few minutes until the marshmallows turn golden or the chocolate softens. Enjoy!
